KashmirKashmir, according to the Mughal Emperor Jahangir, is the most beautiful place on earth and could be called the garden of India. Its many lakes and rivers water the fertile soil washed down from the Himalayas making it the most fertile region of the subcontinent. The variety of produce from Kashmir is staggering and the dishes in this menu are only the tip of an iceberg: temperate fruits like apples, apricots and walnuts; grapes; vegetables beyond counting, including lotus root from its many lakes; vividly coloured chillies; and, of course, the famous Kashmiri saffron, recognised since antiquity as the world’s finest and most expensive.
